As soon as fall hits, I become obsessed with pumpkin spice. Am I too obsessed? I think that depends on the eye of the beholder. Trust me, this granola is so addicting that I often find myself eating it straight off the pan—it’s usually half gone before I even have the chance to put it away!
If you’re a fan of cozy, warming spices though, then this pumpkin spice granola is going to become your new favorite snack. It’s simple to make, packed with wholesome ingredients, and great to sprinkle on everything from yogurt to smoothies, or just enjoy by the handful.
Pumpkin Spice Granola
Pumpkin spice granola that's packed with cozy fall flavors and perfect for snacking. This easy recipe combines oats, pumpkin purée, maple syrup, and warm spices for a crunchy, addictive treat. Enjoy it on yogurt, in smoothies, or by the handful—it’s hard to resist eating straight from the pan!
Ingredients
- 2 cups rolled oats
- 1 cup chopped pecans
- 1/4 tsp salt
- 1/2 tsp pumpkin spice
- 1/4 cup pumpkin puree
- 5 TBSP maple syrup
- 1/4 cup coconut oil (melted)
- 1/2 tsp vanilla
- other add ins (white chocolate chips, cranberries)
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, combine all ingredients (except optional add ins) and mix until well combined.
- Spread the mixture evenly on the prepared baking sheet. If you want clumps of granola, press the mixture down firmly
- Bake for 20-25 minutes, stirring halfway through. If you want clumps of granola, press the granola down after stirring. Remove from oven when the granola starts to turn golden brown.
- Allow the granola to cool completely, then break it up into clumps and stir dried cranberries or white chocolate, if using.
- Store in an airtight container for up to two weeks.
Notes
If you want clumpy granola, it is very important the granola is pressed down before baking, and after stirring. It is also very important that once the granola comes out of the oven, you allow it to cool completely before disturbing it, for the clumps to form.
